Braised Chard Southern Style
Sunday I made Braised Chard Southern Style. I bought Charlotte Chard seeds Gina from Open Circle Seeds at the National Heirloom Expo last September. I planted them in a small planter, and had gorgeous leaves in need of eating. The fog had rolled in and I had a hankering for some Southern comfort food. Braised Chard Southern Style
~ Ingredients ~
2 lb. fresh chard, trimmed & sliced
1 onion, chopped
3 slices bacon, chopped
4 cloves garlic, chopped
1/2 c. bone broth (or chicken)
splash red wine vinegar
pinch of chili pepper flakes
pinch salt
~ Directions ~
Prepare vegetables. In a large soup pan, fry bacon till crisp and fat has been rendered. Add chopped onion, and sauté till translucent. Add garlic and sauté for 2 minutes. Stir in chopped chard stalks, sauté for 2 minutes. Add broth and bring heat to a low boil and deglaze the pan, scraping the bacon bits from the bottom of the pan, which adds flavor to the greens. Work in the greens with a pinch of salt. You may have to work in two batches to get them all in. Stir, lower heat to simmer, cover, and cook for 30 minutes to 2 hours. Serve warm with vinegar and pepper flakes to taste.
