Easy Butternut Squash Soup Recipe

Today, I whipped up this easy butternut squash recipe.


First, gather your vegetables, wash and prepare. Don’t have all the ingredients? No problem! You could also make this soup with sweet potatoes and no squash! But, it’s a great way to eat winter squash! And, I had an abundance this year.

~ Ingredients ~

1 medium butternut squash, peeled & cut into uniform pieces

1 white sweet potato, scrubbed and cut into uniform pieces

1 white onion, cut into chunks

1 yellow sweet pepper, cored, seeded and cut into chunks

1 cup fresh cherry tomatoes (or canned, or tomato sauce)

1 Serrano pepper, seeded and sliced in half

Extra virgin olive oil to drizzle

Salt & cracked black pepper

Herbs of choice, ex.: sage, thyme, tarragon, rosemary

1 cup whole milk, or broth

~ Directions ~

Next, in a medium saucepan, add chunks of squash and potato (optional) with 2 c. filtered water. Steam till tender.

While cooking, prepare peppers and onion, add salt and pepper, herbs, and drizzle generously with olive oil. Cover and bake at 350 degrees until tender, approximately 20 minutes, depending on chunk size. (My sweet peppers are small, so I used 4.) Toss once while cooking to distribute oil and  juices.

When squash is cooked, drain off half the water (or if you don’t have broth or milk, use it all), and add in batches in a food processor.

Then, process till desired smooth consistency.

Now, add back to saucepan to reheat for serving. When warm, add milk or broth, stir. Allow to warm thoroughly, and serve with fresh bread, or topped with chopped walnuts (above), chopped scallion greens, parsley or a dollop of sour cream, or plain yogurt.

Why this will be a go-to recipe!

This recipe is very adaptable, depending on what you have. One of the green squashes that had not turned tan was a casualty of weed whacking the garden. I cut into it to put into the compost bin, and saw that the flesh was perfect. It was delicious.

Since I have lots of white sweet potatoes, I added one for texture. An orange sweet potato would work fine. Or, no potato! Tomato sauce will work instead of fresh tomatoes. If you don’t like heat, use a jalapeño instead. You can also put all the vegetables in a baking dish and cook together.

Alternate cooking method.

Cooking time varies, and it’s much easier to to peel a fresh one. However, I find, the single baking pan works better with cured winter squashes that have a hard skin.
